Oh yes, after all the discussion about Velveeta. We used shredded in on recipe and Velveeta in another.
Velveeta won hands down. You really do need a processed cheese for some Mexican Recipes. It stays melted. The all ready shredded cheese didn't and had less flavor. And we even used Pepper Jack. All ready shredded cheeses have a cornstarch coating on them so they don't stick. Learned that from Rachael Ray. And if you grate your own, it wont stay nice and creamy melty.
